    4 tbsp  butter
    1/2 cup  dk brown sugar
    2 cups  crushed digestive biscuits
    3  egg whites
    1/2 cup  caster sugar
    3  egg yolks
    1 cup  cream

Grated rind and juice of 1 lemon

Combine butter, biscuits and sugar in saucepan. Cook one minute. Turn into shallow bowl.

Beat egg whites to soft peaks in large bowl. Gradually add sugar and beat till stiff.

Beat egg yolks until light. Add to whites.

In bowl used for yolks, beat cream until almost stiff and just before it's done, add rind and juice.

Add cream/lemon mixture to eggs. Carefully fold in.

Put into shallow bowl on top of base. Freeze at least 3 hours.

Before serving, remove from freezer and allow to soften slightly.
