Vegan Nacho Cheese Sauce

I got this recipe from a vegan cooking class a few years ago and it is a staple in my house. We put it over baked potatoes or rice with black beans. You can also use it on corn chips. It tastes like nacho cheese sauce but it is really healthy. Put all this in a blender: | |
1/4 cup | raw cashews |
2 cups | water |
1 1/2 tsp. | salt |
1/4 cup | nutritional yeast |
1 tsp. | onion powder |
1/2 tsp. | garlic powder |
3 tblsp. | corn starch |
2 tsp. | lemon juice |
1/3 cup | red bell pepper chopped |
Blend all ingredients until smooth. pour into sauce pan and bring to boil stirring constantly. It will thicken to nacho cheese consistency. Serve hot. For thicker sauce add one more tablespoon corn starch.
You can also add this to broccoli soup for broccoli cheddar soup, or pour over steamed veggies.
