Blackberry Cobbler

1 c. | self-rising flour |
1 c. | milk |
1 1/4 c. | sugar |
1/2 c. | butter, melted |
2 c. | frozen blackberries |
vanilla ice cream, opt. | |
Garnish: | fresh mint sprigs |
1. Preheat oven to 350 degrees. Whish together flour, milk, and 1 cup sugar just until blended; whisk in melted butter. Pour batter into a lightly greased 11x7" baking dish; sprinkle with blackberries and remaining 1/4 cup sugar.
2. Bake at 350 degrees for 1 hour or until golden brown and bubbly. Serve with ice cream, if desired. Garnish, if desired.
**2 cups frozen raspberries or blueberries may be substituted .
