Bread eggplant with eggs (beat) and breadcrumbs and panko |
Fry in oil till golden brown
Sauté vegetables (onions, mushrooms and green bell pepper) in extra virgin olive oil
Boil pasta
Layer eggplant, veggies, mozzarella cheese and herbs in pan
Bake till cheese is melted and golden brown
Toss cooked pasta with pesto or marinara sauce
