Refrigerator Mashed Potatoes

5 lbs. | potatoes |
6 oz. | cream cheese |
1 c. | sour cream |
2 tsp. | onion salt, (optional) |
1 t. | salt |
1/4 t. | pepper |
2 Tbs. | butter |
Cook peeled potatoes, drain and mash until smooth. Add remaining ingredients and beat until light and fluffy. Cool. Cover and place in frig. May be used anytime within 2 weeks. To use, place desired amount in a greased casserole, dot with butter and bake @350 until heated throughout ----about 30 minutes. Using the full amount, put in a 2 qt. casserole.
I have been given some wonderful mashed potato seasonings from my niece in California. You may also have these. I add them at the end, and they certainly make this potato dish outstanding. If you have none, just add some because the longer they are in the frig. the better they taste with the seasonings.
