Ingredients: | |
Ground beef | |
Taco seasoning Flour tortillas
1 package | shredded Mexican cheese |
1 can | refried beans, (you can also substitute black beans if you like) |
1 package | Uncle Ben's Spanish Rice, (the microwavable steam kind) |
Taco Salad ingredients (your preference. I use shredded lettuce, pre-packaged pico de gallo, salsa & sour cream) Directions: -Preheat oven to 375 -Brown beef in skillet, follow directions on taco seasoning packet. -Heat rice according to directions on package -Empty refried beans into bowl and microwave for 1 minute (they're easier to spread if they're warm) -Once everything is cooked the layering begins! -You can use any type of baking dish you like. I tend to use a pie dish because it's smaller but I've made it in a baking dish before... It all depends on how much you want to make. -Start with a flour tortilla base, then spread a layer of beans, then
rice, then meat, & then cheese. Place another tortilla on top of that
and repeat the process. Once finished, top with a flour tortilla and your remaining cheese. -I bake mine in a 375 oven for 15 min uncovered and then 15 min covered. Doing it this way allows the cheese to brown and not stick to the
aluminum foil |
-Once out of the oven slice and top with your favorite taco salad
ingredients.
