Roasted Beef Tenderloin

6-7 pound | whole tenderloin |
2 tbs | kosher salt |
3 tpsn pepper | |
1 tbs | sugar |
1/3 tbs | olive oil |
2 tbs | bacon grease |
1 tbs | butter |
Preheat oven to 450. Trim fat from surface of tenderloin. In medium bowl combine salt, pepper, and sugar. Drizzle 1/3 c olive oil. Finally add the bacon greased stir mix and set aside. Add butter and 1 tbs olive oil. Sear both sides of tenderloin. Place meat on roasting rack and pour seasoning and grease over the top and rub with fingers. Insert meat thermometer sideways into thickest part of meat and roast 15-20 min. Remove meat when it's desired doneness and let rest for bout 10 min.
