8 slices | thick cut bacon |
8 | russet potatoes |
Canola oil | |
Kosher salt | |
1 1/2 cups | sharp cheddar |
1 c | sour cream |
4 | green onions sliced |
Preheat oven to 400 degrees. Bake potatoes for 45-60 min.
Slice potatoes lengthwise and scoop out the inside. Brush both sides with oil and salt liberally. Place skins cut side down and return to oven. Bake 7 min. Meanwhile fry bacon. When potatoes are done, put cheese in the boats, top with bacon, put back in oven to melt cheese, when ready to serve, top with sour cream and onions.
