    1 can (12 1/2 ounces)  chunk white chicken, drained and rinsed, or 1 1/2 cups chopped cooked chicken breast
    3 tablespoons  crumbled blue cheese
    3 tablespoons  fat-free mayonnaise
    1 medium  carrot, shredded
    1/4 cup  finely chopped celery
    2 tablespoons  finely chopped white onion
    1 clove  garlic, finely chopped
    pinch  salt
      ground black pepper
    6 slices  sourdough or dark rye sandwich bread, toasted

DIRECTIONS
In a mixing bowl, combine the chicken, cheese, mayonnaise, carrot, celery, onion, garlic, salt, and pepper to taste. Stir to mix. Spread on the toasted bread.
