Confetti Mashed Potatoes

2-1/2 lbs | red potatoes, cut into chunks |
2 stalks | celery, cut into 1/4" pieces |
2 | carrots, peeled and cut into 1/4" pieces |
2 cloves | garlic |
1/2 cup | milk |
1/2 cup | sour cream |
2 Tbsp | butter, room temperature |
1 Tbsp | chopped fresh parsley |
1 tsp | salt |
1/2 tsp | pepper |

In pot combine potatoes, celery, carrots and garlic with enough water to cover. Over high heat bring to boil. Cook until potatoes are tender, about 20 minutes. Drain and return to pot. Mash potatoes, celery, carrot and garlic mixture until as smooth as possible. Place over low heat; stir in milk, sour cream, butter, parsley, salt and pepper. Serve topped with additional butter.
