Black Beans

1 lb | black beans, (should yield 2.5 - 3 cups cooked beans) |
2 | bay leaves |
4 cloves | garlic |
2 tbsp | chili powder,, (or less?) |
1/2 tsp | thyme |
Salt | |
pepper to taste | |
1 medium | onion, minced |
Soak beans overnight.
Next day, place beans in large pot with water to cover.
Turn the heat to high and bring to boil.
Add bay leaves, chili powder, thyme and 2 crushed peeled cloves of garlic. Turn down heat and allow to simmer for an hour or until the beans are very tender (maybe 30 min in pressure cooker?)
Mince the remaining cloves of garlic and add to pot along with onion.
