Katie's Meatloaf - YUM

1 cup | chopped onion-sauté 3 min |
1/4 cup | ketchup |
1 TBSP | Dijon mustard |
1 cup | mozzarella |
2 TBSP | Parmesan cheese |
1 1/2 lbs. | Meatloaf mixture or ground beef |
1/2 tsp | dried oregano |
1 tsp | dried parsley |
1/4 tsp | black pepper |
1/2 cup | breadcrumbs |
1 lg | egg slightly beaten |
Combine all ingredients in a large bowl; mix until blended. Pack mixture into a greased 8X4 loaf pan. Combine 2 TBSP ketchup and 1 TBSP Dijon mustard; spread over top of loaf. Bake at 375 degrees for 1 hour, or until meat thermometer reads 160 degrees. Let stand in loaf pan for 10 minutes.
