My Sweet and Sour Pork

1 13oz can | pineapple chunks |
1 cup | sugar,, ( or a little less) |
1/2 cup | cider vinegar |
2 tbsp | cornflour, dissolved in 1/4 cup cold water |
2 small | tomatoes, cut up and seeded |
1 | red pepper, cut up |
2 tsp | soy sauce |
1/2 tap crystallized ginger, minced finely | |
3 | roasted pork steaks, cut into chunks |
Combine pineapple, sugar and vinegar. Add cornflour dissolved in the water.
Cook over medium heat, stirring constantly until it thickens and turns clear.
Add rest of ingredients and cook until pepper softens.
Serve with rice.
