Mom's Bread (Hecker's recipe)

2 cups | lukewarm water |
3 pkts yeast | |
2 cups | milk, warmed slightly |
1 1/2 tbsp | salt |
6 tbsp | sugar |
3 oz | butter, very soft |
3 lb | flour in US, ( in Ireland, 3.4 oz) |
Dissolve yeast in lukewarm water and set aside.
Meanwhile put warmed milk into large bowl. Add salt, sugar, very soft butter, then dissolved yeast/water. Then half the flour. Stir well with large wooden spoon and add most of the rest of the flour. Take out of bowl and knead for 8 minutes, trying not to add much more flour. Scrape bowl, then put some butter into bowl and grease well. Round up dough and place top side down into bowl. Then turn over. And cover with tea towel. Place in cold oven on rack near bottom of oven but one which allows enough room to fit a 13x9inch pan underneath.
Pfillan with hand- hot water.
Leave for 1.hour and 20 minutes or until double in bulk
