Banana-Chocolate Chip Muffins

3/4 c. | packed brown sugar |
1/2 c. | butter, softened |
1 1/2 c. | mashed ripe banana |
2 | eggs |
1 tsp. | vanilla extract |
1 tsp. | grated orange peel |
2 c. | all-purpose flour |
1 tsp. | baking soda |
1/4 tsp. | salt |
1/2 c. | miniature chocolate chips |
Heat oven to 350 degrees. In a large mixer bowl, combine brown sugar and butter. Beat at medium speed, scraping bowl often, until mixture is creamy (1-2 minutes). Add bananas, eggs, vanilla and peel. Continue beating, scraping bowl often, until well mixted (1-2 minutes).
In medium bowl, stir together flour, baking soda, and salt. Add flour mixture to banana mixture; stir just moistened. Fold in chocolate chips. Spoon into greased muffin pans. Bake for 18-25 minutes, or until light golden brown. Cool 5 minutes; remove from pans.
