Steamed mussels and chorizo

11/2 lb | fresh mussels |
1 tbsp | extra virgin oil |
1 medium | onion, thinly sliced into rings |
1/2 c | sliced spicy chorizo sausage |
1/4 c | white wine |
1/2 | lemon |
1/2 c | grape tomatoes, split lengthwise |
1/4 c chop | fresh parsley |
Fresh ground pepper |
Clean mussels. In large saucepan, heat olive oil over medium heat . Add onion and sauté till translucent. Add chorizo (if using) and sauté till lightly brown. Add mussels , along with wine. Cover,reduce heat to low and steam for 5-7 min. Until all mussels have opened.
Squeeze lemon juice over mussels and grape tomatoes. Toss gently and transfer to bowls. Garnish with parsley, season with pepper and serve with multigrain baguette.
