Baked Flounder with Fresh Lemon Pepper

2 Tb. | grated lemon rind, about 3 lemons |
1 Tb. | olive oil |
1 1/4 tsp. | black peppercorns, crushed |
1/2 tsp. | salt |
2 | garlic cloves, minced |
4 (6 oz.) | flounder fillets |

1. Preheat oven to 425 degrees.
2. Combine the first 5 ingredients. Place fillets on a jelly-roll coated with cooking spray. Rub the garlic mixture over fillets. Bake at 425 degrees for 8 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
