2 pkgs | Large Soft Flour Tortillas |
1 box (600 g) | Steak Skewers, Montreal Spice |
1 tbsp (15 mL) | Extra Virgin Olive Oil |
1 cup (250 mL) | Canadian White Cheddar Cheese, Aged 2 Years |
1 | sweet red pepper thinly sliced |
1 | sweet green pepper, thinly sliced |
1 medium | red onion thinly sliced |
1 cup (250 mL) | loosely packed whole fresh coriander leaves |
1 cup (250 mL) | sour cream |
Preheat barbecue to medium heat.
Place 12 of the tortillas on greased grill, saving remainder for another use; cook for 10 seconds per side or until warm. Stack and wrap in foil to hold warm. Place frozen steak skewers on grill; cook over medium heat for 18 to 20 minutes, turning occasionally. Meanwhile, in nonstick frying pan heat oil over medium-high heat; cook peppers and onions for 5 minutes, stirring occasionally, or until tender-crisp.
Place a steak skewer on a warm tortilla; remove skewer. Top with some peppers and onions, cheddar, coriander and sour cream. Roll up. Repeat with remaining ingredients.
