Southern Carrot Cake

1 1/2 C - oil 2 C - sugar 3 C - flour 2 C - grated carrot (packed) 1 C - crushed pineapple + juice 1 1/2 C - chopped walnuts
    3  eggs

1 1/2 Tsp - baking soda
1 Tsp - cinnamon
1/2 Tsp - salt
2 Tsp - vanilla

Beat oil, sugar & eggs on high for 5 min. Add baking soda, cinnamon, & salt. Beat in 1/2 flour. Add carrots, pineapple, nuts & vanilla beat. Beat in remaining flour about 1 min. Bake in 10" tube pan @ 350 F for 1 hour, then reduce heat to 300 F for last 30 min. Let cool 5 min in pan then turn out on rack.
