LEMON SQUARES | |
1 cup | butter |
1/2 cup | confectioners sugar, and 1 Tablespoon to sprinkle |

2 1/3 cup | unsifted all-purpose flour |
4 | eggs |
1 3/4 cup | sugar |
1/3 cup | lemon juice |
1/2 teaspoon | double acting baking powder |
Preheat oven to 350 degrees. In medium bowl cream butter and 1/2 coup confectioners sugar. Add 2 cups flour and stir with wooden spoon until well blended. pat evenly into a 13 x 9 baking pan. Bake for 20 minutes. conbine eggs, sugar, remaining 1/3 cup flour, lemon juice and baking powder in blender container, cover and belnd for 5 seconds. Scrape down and blend 5 seconds more. Pour over partially baked crust. Bake 25 minutes more or until golden brown. Cool completely on wire rack. Sprinkle with confectioners sugar. Cut into 32 pieces.
