Couscous salad

COUSCOUS SALAD | |
20 | sun dried tomatoes, not packed in oil, coarsely |

3 cups | cooked couscous, cold |
1 medium | cucumber, peeled,seeded and coarsely chopped |
1/4 cup | fresh parsley, chopped |
2 Tablespoons | fresh basil, chopped |
1/2 cup | feta cheese, crumbled |
2 Tablespoons | pine nuts |
2 Tablespoons | olive oil |
1/4 cup | lemon juice |
2 Tablespoons | fresh oregano, chopped |
Pour hot water over sun dried tomatoes to cover them. Let stand for 10-15 minutes or until softened. Combine tomatoes, couscous, | |
cucumber, parsley, basil, cheese and nuts in a large bowl and |
mix well. Mix remaining ingredients and pour over couscous
mixture and toss. Cover and refrigerate for 1-2 hours.
