Apple-Cheddar Turnovers

3/4 c. | sugar |
4 Tb. | unsalted butter |
3 | red apples, (such as Gala), peeled, cored and quartered |
12 slices | white bread, crust removed |
1 c. | shredded cheddar cheese |
1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. In a large skillet, cook 1/4 cup water, the sugar and butter over high heat until bubbling and a light amber-colored caramel forms, 6-8 minutes. Add the apples and cook over medium-low heat, turning occasionally, unil softened, about 12 minutes. Transfer the apples to a plate; let cool. Let the caramel cool, then pour into a small bowl.
2. Arrange the bread slices on a clean, dry work surface, then sprinkle a round Tb. of the shredded cheese evenly over each slice. Using a rolling pin, press and roll the cheese into the bread until flattened into thin squares. Turn the bread slices cheese side down.
3. Lightly wet the edges of each bread slice with water. Place 1 cooled apple quarter in the center of each slice and spoon some caramel on top; fold diagonally in half, forming a triangle, then press the edges to seal. Transfer the turnovers to the prepared baking sheet and bake until golden, about 20 minutes. Let cool slightly before serving.
