1 lb | bow tie pasta |
1/4 cup | EVOO, (4 times around pan) |
6 | garlic cloves |
2 medium | zuchinni |
Coarse salt/pepper | |
1cup | parmigiano-reggiano or romano |
1 cup | fresh basil, (20 leaves) |
Cook pasta, reserve 2 ladles of starchy water. In skillet add EVOO & garlic, cook 2 minutes then add zucchini, cook 8-10 minutes. Season w/ salt & pepper, add starchy water, add pasta to zucchini, toss w/ cheese. Serve w/ shredded basil on top!
