Source:
1 (4 to 5 lb) | beef brisket |
1 medium | onion, quartered |
2 large | garlic cloves |
10 | whole cloves |
1 (10 oz) jar | apple jelly |
1/3 cup | dry white wine |
3 Tbsp | spicy brown mustard |
3 Tbsp | minced green onions |
1-1/2 tsp | salt |
3/4 tsp | black pepper |
3/4 tsp | curry powder |
Place brisket, onion, garlic and cloves in large Dutch oven. Add enough water to cover brisket. Bring to a boil, then reduce heat, cover and simmer until tender, about 2-1/2 to 3 hours. Preheat the oven to 325. To prepare glaze, combine jelly, wine, mustard, green onions, salt, pepper and curry powder in a small saucepan. Heat until jelly melts, stirring occasionally. Transfer brisket to a shallow roasting pan. Discard liquid and solids left in the Dutch oven. Brush brisket with glaze. Roast for 45 minutes, brushing frequently with glaze. Carve brisket into thin slices. Serve with remaining glaze.
