Apple Brownies

| 6 | eggs |
| 3 1/2 c. | sugar |
| 2 c. | vegetable oil |
| 2 tsp. | vanilla |
| 4 c. | all-purpose flour |
| 2 tsp. | cinnamon |
| 2 tsp. | baking powder |
| 1 tsp. | salt |
| 4 c. | diced apples |
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, beat eggs and sugar until fluffy and pale. Add oil and vanilla; mix well. Sift dry ingredients and mix into the egg mixture. Stir in apples.
3. Coat two 13x9" pans with nonstick spray and spread batter evenly into pans. Bake until a toothpick inserted into the center comes out clean, 45-50 minutes.
