1/3 cup | cocoa nibs |
6 oz | butter |
3/4 cup | sugar |
1/2 cup | brown sugar |
1 | egg |
6 oz | melted dark chocolate |
2 cups | flour |
1 tsp | baking soda |
1 tsp | salt |
Grind the cocoa nibs. Cream the sugars, butter and cocoa nibs. When fluffy add the egg, then the melted chocolate. Sift in the flour, baking soda and salt. Bake at 325 for 5 minutes, turn and bake another 5 minutes. Makes 20 cookies or 10 Ice Cream Sandwiches. CARAMEL ICE CREAM | |
2-1/2 cups | sugar |
3-1/2 cups | cream |
5 oz | butter |
1 tsp | Vanilla |
1-1/2 tsp | salt |
Bring to a boil the cream, butter and salt.
Caramelize the sugar to an amber color, add to the liquid.
Finish with the vanilla and cool in the refrigerator.
This recipe will fill 10 ice cream sandwiches with a little left over. Keep in the refrigerator for a late night snack.
