Stir-Fried Chicken with Basil and Green Curry

3 TBS | oil |
3 TBS | green curry paste |
1 lb | boneless chicken, sliced |
1/2 cup | bamboo shoots |
1/2 cup | sliced green and red jalapeƱo peppers |
1/4 cup | coconut milk |
3 TBS | fish sauce |
3 TBS | sugar |
1 cup | hot basil leaves |
3 TBS | coconut cream |
Heat a large skillet and add the oil and green curry paste. Add the chicken and stir-fry for 3 mins, then add all but the last two ingredients. cook on high heat for 4 mins.
Toss in the basil leaves and pour the coconut cream on top. Remove to a serving plate.
Serves 4
