Hot and Sour Soup

8 oz | shrimp, shelled and deveined, with shell reserved |
3 cups | water |
2 | garlic cloves |
1/4 cup | fish sauce |
2 | shallots, sliced |
1 can | straw mushrooms, drained |
1 tsp | thai chili paste |
lemon or lime juice to taste
chopped cilantro
rinse shrimp shells and place them in a large pot with the water. Heat to boiling, strain the broth and discard the shells.
Add the garlic, fish sauce, shallots and lemon juice to stock, then the mushrooms and chili paste.
Add shrimp to the soup and reheat to boiling.
Serve with lime slices, hot peppers and cilantro for individual servings.
