Mango Cucumber Salad | |
1 cup | diagonally cut thinly sliced seeded peeled cucumber, (about 2 medium) |
1 cup | thinly sliced peeled mango,, (about 2 medium) |
1 cup | black beans |
3 tablespoons | fresh lime juice, (or more to taste) |
2 tablespoons | rice wine vinegar |
1T | sugar |
1T | canola or light olive oil |
1T | minced jalapeno peppers |
2T | chopped cilantro |
Preparation: Combine all ingredients in a medium bowl; toss gently. Let stand 15 minutes before serving.
