Ambrosia

The key to a tasty ambrosia is to completely remove the pith from the orange sections. | |
9 | navel oranges |
2 (20 oz.) cans | pineapple chunks, drained |
1 c. | honey |
1 c. | sweetened flaked coconut |
1-2 tsp. | almond extract |
Garnish: | stemmed maraschino cherries |
1. To section an orange, first peel it with a paring knife and be sure to remove the white pith. Holding fruit over a bowl to cath juices, slice between membrane and one orange segment, then, life the segment out with the knife blade. Repeat with all oranges.
2. Combine first 5 ingredients in a large bowl and stir gently; cover and chill at least 8 hours.
3. Place ambrosia in individual crystal dessert dishes, if desired. Garnish each with a maraschino cherry.
