Almond-Lime Bread

1 (3 oz.) pkg. | lime-flavored gelatin, divided |
3 c. | buttermilk baking mix |
1/2 c. | granulated sugar |
3/4 c. | sour cream |
1/2 c. | milk |
2 | eggs |
1 c. | sliced almonds, divided |
2 Tb. | hot water |
1 c. | sifted powdered sugar |
1/4 tsp. | almond extract |
Preheat oven to 350 degrees. Reserve 1 tsp. lime gelatin for glaze. Combine baking mix, sugar, and remaining gelatin in a medium bowl. Add sour cream, milk, and eggs;; beat until well blended. Stir in 3/4 cup almonds. Spoon batter into 2 greased and floured 4x8" loaf pans. Bake 40-45 minutes or until a toothpick inserted in center of bread comes out clean. Cool in pans on a wire rack 10 minutes. Remove bread from pans and transfer to a wire rack with waxed paper underneath.
For glaze, combine reserved 1 tsp. gelatin and hot water in a small bowl' allow to stand 5 minutes. Add powdered sugar and almond extract to gelatin mixture; stir until smooth. Drizzl.e glaze over warm bread. Sprinkle remaining 1/4 cup almonds over glaze. Allow glaze to harden. Store in an airtight container.
