Stuffed Bell Peppers

1. garlic clove 8. sprigs cilantro 4. green onions | |
1/2 | onion |
1 tsp. | salt |
1 tsp. | pepper |
1 can | black beans |

1/4 lb | lean ground beef |
Lime juice
Fat free Mexican blend cheese
Boil peppers for 5 minutes then rinse under cold water. Cook rice according to package directions and add beans. Cook onions and seasonings on stove top. Bake covered @350 degrees for 20 minutes. Sprinkle with lime juice and cheese then bake an additional 10 minutes.
