Stud-Stuffed Peppers Serves: 2 2 mediums green peppers | |
1/2 pound | ground beef |
1 medium | potatoes, peeled and grated |
1 1/2 tsps | chili powder |
1/4 tsp | salt |
1/4 cup | shredded cheddar cheese |
Cut off tops of green peppers, and remove seeds. In large saucepan, cook peppers in boiling water for 4-5 minutes. Drain and rinse in cold water. Invert on paper towels.
In a skillet, cook ground beef over medium heat. Add potatoes, cook and stir for 6-8 minutes or until tender. Stir in the chili powder, salt and pepper. Spoon into peppers.
Place peppers in loaf pan and bake at 350* for 35 minutes. Sprinkle with cheese. Bake uncovered for 5-10 minutes longer.
