CREAMY BROCCOLI CASSEROLE

Creamy Broccoli Casserole | |
2 10-ounce packages | frozen, chopped broccoli |
2 | eggs, lightly beaten |
1 (10 3/4-ounce) can | cream of mushroom soup |
1 cup | mayonnaise |
1 cup ( 4 ounces) | cheddar cheese, shredded |
1 sm | onions, finely chopped |
1/2 cup | butter, melted |
1/3 cup | crushed butter-flavored crackers |
Place 1 in water and broccoli in large saucepan. Bring to a boil, reduce heat, cover and simmer 5-8 minutes. Meanwhile in a bowl, combine eggs, soup, mayo. cheese, onion, and butter. Drain broccoli. Gently stir into soup mixture.
Transfer to a 1 1/2 qt baking dish. Sprinkle with crackers. Bake, uncovered, at 350* for 25-30 minutes.
