Chicken Stir-Fry

1 | boneless chicken breast, cubed |
1 | garlic clove, crushed |
1/2 small | onion, minced |
1/2 tsp | ginger root, minced |
3 tbsp | soy sauce, divided |
2 tbsp | oil, divided |
3 | celery stalks, diagonally sliced |
10 | green beans, cut, (1 inch) |
1 | carrot, sliced |
6 | snow peas, cut in half |
1 C | bean sprouts |
1/4 can | water chestnuts, sliced |
1/4 can | young corn spears |
1/2 C | chicken broth |
2 tbsp | cornstarch |
Dash | pepper |
In plastic container, combine garlic, onion, ginger, and 2 tbsp soy sauce; add cubed chicken. Label, put in frig. (1 hr.). Prepare vegetables.
