Hominy Sausage Soup Serves: 2
    1/4 pound  Bulk sausages, italian
    1 tsp  cumin seeds
    1/8 tsp  ground coriander
    1/8 tsp  cayenne pepper
    2 cups  reduced sodium chicken broth
    3/4 cup  hominy, rinsed and drained
    1-2 tbsps  jalapeƱo peppers, chopped
    1/4 tsp  pepper
    1 tbsp  minced, fresh cilantro

Crumble sausage into a small skillet. Cook over medium heat until no longer pink. Drain. In a small saucepan, toast cumin seeds over medium heat for 2-3 minutes or until browned. Stir in coriander and cayenne pepper. Cook and stir for 30 seconds.

Add the broth, hominy, jalapeno peppers, and sausage. Bring to a boil. Reduce heat and simmer, uncovered, for 15-20 minutes. Stir in cilantro.

Serves 2.
