KIELBASA POTATO CHOWDER

Kielbasa Potato Chowder Serves: 2 | |
1/2 pound | kielbasa, cut into 1/2" pieces |
3 | bacon strips, diced |
1 sm | onions, chopped |
1 clove | minced garlic |
1 1/2 cups | chicken broth, reduced sodium |
1 1/2 cups | water |
2 mediums potatoes, peeled and cubed | |
1/2 tsp | chicken bouillon |
1/8 teaspoon | pepper |
2 kales leaves or spinach, fresh and chopped | |
1/2 cup | heavy cream |

In a lg skillet, brown kielbasa and bacon, drain reserving 1 tsp drippings. Add onion and garlic, cook over medium heat until onion is tender.
In a lg saucepan, bring broth and water to a boil. Add the potatoes, bouillion, and pepper. Cook for 10 minutes or until potatoes are tender. Add the meat mixture and kale. Coke over medium heat for 2 minutes or until kale is wilted. Reduce heat. Add the cream ad cook 1 minute longer.
