Easy Bread Pudding (Pam Vogt)

1/2 loaf | Italian bread cut in small cubes |
2 | eggs |
1-1/2 cups | fat free French Vanilla Int'l Delight Creamer |
6 Tbsp | water |
1/4 cup | raisins or mini choc chips |
1/4 cup | sugar |
1/8 tsp | cinnamon |
Put bread in a greased 8x8 pan. In bowl beat eggs, creamer and water. Pour over bread. Sprinkle in raisins or choc chips. Use fingertips to make sure all bread is wet and raisins/choc chips are distributed. Add additional creamer if needed.
Topping: combine 1/4 cup sugar and 1/8 tsp cinnamon. Sprinkle on bread mixture. Place pan in a water bath in oven. Bake uncovered at 350 for 30-35 minutes.
Serve alone or with whipped cream or ice cream.
