American Style Chopped Salad

4 small | ripe tomatoes |
1/2 cucumber deseeded | |
4 | shallots |
Iceberg lettuce | |
2 large | carrots |
4 tbsp | honey roast peanuts, finely chopped |
4 | hard boiled eggs |
4 tbsp | chopped chives |
200g | wafer thin ham, chicken or turkey |
For the dressing: | |
3 tbsp | extra virgin olive oil |
3 tbsp | sunflower oil |
4 tbsp | red wine vinegar |
2 tbsp | Dijon mustard |
1 level tsp caster sugar | |
Salt | |

1. Slice and then chop the tomatoes.
2. Very finely slice and dice the cucumber.
3. Finely slice the iceberg and shallots, and add to the tomatoes and cucumber.
4. Finely slice and chop the carrots and add to the bowl.
5. Finally, add the chopped nuts, eggs, chives and meat.
6. Really mix well and chill.
7. Meanwhile make the dressing by putting all the ingredients in a bowl and mixing together.
8. After a couple of minutes the mustard will emulsify the oil and vinegar and form a thickish dressing.
9. Pour over the chilled salad and really mix well
10. Season with salt and pepper and serve straight away.
