Sesame Seed Crusted Salmon on Soba Noodles

1 lb | soba noodles, cooked al dente |
1/2 cup | soy sauce |
2 tablespoons | fresh lime juice |
2 | garlic cloves, finely chopped |
1 tablespoon | minced fresh ginger |
1 tablespoon | olive oil |
2 teaspoons | sesame oil |
1/4 cup | coarsely chopped cilantro |
3 | scallions, finely chopped |
4 (6 ounce) | salmon fillets |
salt | |
pepper | |
2 tablespoons | sesame seeds |
2 tablespoons | black sesame seeds |
2 tablespoons | olive oil |
1Place noodles in a large bowl.
2Whisk together the soy sauce, lime juice, garlic, ginger, olive oil and sesame oil.
3Pour over the noodles, add the cilantro and toss to combine, season with salt and pepper.
4Garnish with scallion.
5Season salmon on both sides with salt and pepper.
6Mix together the sesame seeds in a medium bowl.
7Dredge salmon skin-side down in the seeds.
8Heat oil in a large skillet over medium-high heat.
9Sear the salmon seed-side down in the pan and cook until golden brown.
10Turn the fillets over and continue cooking for 3 to 4 minutes for medium doneness.
