Preparation time: 10 minutes plus chilling time
    4 large  mangoes
    1 tbsp  lemon juice
    2  egg whites
    2 tbsp  artificial sweetener

1. Peel, stone and roughly cho the mango flesh, place in a blender with the lemon juice and process until smooth.
2. Place a tablespoon or two of the purée in the bottom of four chilled dessert bowls, transfer the rest to a large bowl and set aside.
3. In a separate bowl, whisk the egg whites until softly peaked and then gradually whisk in the sweetener until the mixture is shiny and stiff.
4. Carefully fold the egg white mixture into the remaining mango and lemon purée until well combined and then spoon into the dessert bowls. Chill in the fridge for 2-3 hours before serving.
