Grilled Mojo Chicken

4 tablespoons | Italian Parsley, Mince |
1 tablespoon | Oregano, MInce |
1 tablespoon | Thyme, MInce |
3 Cloves | Garlic, MInce |
2 teaspoons | Ground Cumin |
1/4 cup | Olive Oil |
4 | boneless skinless Chicken Breasts, Marinate 10 minutes to 2 hours |
2 | Limes, Grate 1 tsp zest and squeeze 1/4 cup juice |
1 | Orange, Grate 2 tsp zest and squeeze 1/3 cup juice |
Marinade:
1. Grate 2 tsp Orange zest and squeeze 1/3 cup juice
2. Grate 1 tsp Lemon zest and squeeze 1/4 cup juice
3. In a shallow dish, mix the zest, juice, 2 tblsp of parsley, the rest of the ingredients, and stir in the oil.
4. Season the chicken generously with Salt and Pepper, then add the chicken to the marinline while laying the chicken flat in the dish.
5. Let stand at room temperature for 10 minutes, or sit in the fridge for 2 hours.
Cook the Chicken:
1. Oil a medium-high heated grill, then apply chicken.
2. Cook around 5 - 7 minutes, then turn once, and cook for 5 - 7 minutes.
Preparation:
Put the chicken on plates, and sprinkle with the remaining parsley.
