1 lb | boneless, skinless chicken breasts |
2 cups | Italian bread crumbs |
1/2 cup | lemon juice |
1/2 cup | grated Parmesan cheese |
1/2 cup | Italian dressing |

Cut chicken into 1-inch cubes, place in mixing bowl.add 1 cup bread crumbs, lemon juice and cheese to mixing bowl. Add enough Italian dressing to coat chicken and dampen bread crumbs. Mix thoroughly. Cover; refrigerate overnight.
The next day, press crumb mixture firmly into chicken pieces. Thread chicken onto skewers, pushing together so that no space remains between pieces of chicken. Lightly roll skewered chicken in remaining 1 cup bread crumbs. This will prevent chicken from sticking to the grill.
Grill 10-12 minutes or bake at 350 for 20-25 minutes. Turn frequently so as not to burn. Slide chicken off skewers onto dinner plates, top with clarified butter. Garnish with lemon wedges.
