    3 tablespoons  vegetable oil
    2  Onions, minced
    4 cloves  garlic, minced
    1 tablespoon  fresh thyme , minced, or 1 teaspoon dried
    3 tablespoon  flour all-purpose
    1 cup  low-sodlum chicken broth
    1/2 cup  heavy cream
    1 teaspoon  dry Mustard
    2 pounds  boneless, skinless Chicken thighs, trimmed
      Salt and pepper
    2 cups  Instant rice, Uncle Ben's
    1 cup  shredded cheddar cheese, (4 ounces)
    1/2 cup  grated Parmesan cheese, (1 ounce)
    12oz  broccoli , florets, cut into 1-inch pieces (4 1/2cups)

    2slices  white sandwich bread
    2T  butter

Heat 2 tablespoons oil in large skillet over medium-high heat until shimmering. Add onions, garlic, and thyme and cook until onions are lightly browned, 8 to 10 minutes. Stir in ?our and cook for I minute. Slowly whisk in broth, scraping up any browned bits and smoothing out any lumps; transfer to slow cooker,
Stir heavy cream and mustard into 6qt slow cooker. Season chicken with salt and pepper, add to slow cooker, and coat evenly with sauce, Cover and cook until chicken is tender, 4 to 6 hours on low (the optimum temperature for low setting of a slow cooker is 195ºƒ to 205ºƒ).
Break up chicken into bite-size pieces with wooden spoon. Stir in rice, cheddar, Parmesan, and 1 teaspoon salt, cover, and cook on high until rice is tender, 20 to 30 minutes.
Microwave broccoli with remaining tablespoon oil in bowl, stirring occasionally, until tender, about 4 minutes. Stir broccoli into casserole and let sit until heated through, about 5 minutes. Sprinkle with Toasted Bread-Crumb Topping;

Toast 2 slices white bread (crumbled) in 2 tablespoons of melted butter over med-high heat in large skillet until golden about 5 to 7minutes.
