Carrot and Walnut Cake
Nb persons: 8
2 cups | grated carrot |
1 cup | raw sugar |
3/4 cup | vegetable oil |
2 | eggs |
1 teaspoon | vanilla essence |
1 teaspoon | allspice |
1 teaspoon | bi-carb soda |
2 cups | plain flour |
1/2 cup | walnuts |
1 cup | icing sugar |
Lemon juice to taste. | |
Water |
In a kitchen whizz place eggs, vanilla essence, oil and sugar. Process until smooth. Add grated carrot and process until combined. Take care not to process too much.
Add allspice, bi-carb soda and with whizz operating gradually add flour and then 3/4 of walnuts. When combined turn into greased ring tin and bake in moderate oven for approx 45 mins or until browned.
Leave to cool and turn out onto wire rack.
Combine icing sugar, lemon juice and water to make icing.Ice cake when cooled and top with crushed walnuts
