Flank Steak w/Spinach & Garlic

1/4 c | panko |
1 T | pine nuts, toasted |
2 t | red wine vinegar |
2 cloves | garlic, minced |
1/4 t | salt |
1 lb | flank steak, trimmed of fat |
3 oz | swiss chard, about 6 cups |
Preheat to 400. Arrange a rack in a baking pan and coat w/cooking spray.
In sm bowl combine panko, nuts, vinegar, garlic, salt.
Cut steAk in half to open like a book. Spread panko mixture and greens on top. Roll up steak. Tie steak up. Bake for 35 mins. Until 150 degrees. Let rest for 10 minutes.
