This rice is used as base for sushi and sushi rolls. Cook:
    3 cups  Japanese rice, but use 10% less water than usual.
Add:
    about 1/2 cup + 2 tbsp  sushi vinegar, see separate recipe

Mix well with a cutting and folding movement.
