Rocket, Pear & Prosciutto Salad

8 slices | prosciutto |
150 gr | baby rocket leaves |
2 | pears, unpeeled, thinly sliced |
Parmesan Vinaigrette | |
1/3 cup | extra virgin olive oil |
1 cup | finely grated Parmesan cheese |
3 tablespoons | white balsamic vinegar |
2 tablespoons | warm water |
1 tablespoon | Dijon mustard |
Pepper to taste |
Blend
Lay prosciutto in a single layer on lightly greased oven trays
Cook in 200 C oven for 8 minkutes
Cool on trays, break into large pieces
Place all on a platter
Drizzle with dressing
