Rocket, Pear & Prosciutto Salad

| 8 slices | prosciutto |
| 150 gr | baby rocket leaves |
| 2 | pears, unpeeled, thinly sliced |
| Parmesan Vinaigrette | |
| 1/3 cup | extra virgin olive oil |
| 1 cup | finely grated Parmesan cheese |
| 3 tablespoons | white balsamic vinegar |
| 2 tablespoons | warm water |
| 1 tablespoon | Dijon mustard |
| Pepper to taste | |
Blend
Lay prosciutto in a single layer on lightly greased oven trays
Cook in 200 C oven for 8 minkutes
Cool on trays, break into large pieces
Place all on a platter
Drizzle with dressing
