Zucchini Slice (Bettine Rashleigh)

| 2 medium | zucchinis, sliced |
| 1 large | onion, sliced |
| 1 medium | carrot, grated |
| 1/2 medium | red capsicum, diced |
| 3 Rashers bacon, diced & cooked (or ham slices) | |
| 1 cup | grated cheese |
| 1 cup | self raising flour |
| 1/2 cup | oil |
| 5 | eggs, lightly beaten |
| 1/2 teaspoon | salt |
| 1/4 teaspoon | black pepper |
Combine all
Pour into low sided greased dish
Bake @ 180 C for 30-40 minutes
