Zucchini Stuffed with Tuna

2 large | zucchini |
1/2 teaspoon | salt |
1 tablespoon | olive oil |
3/4 cup | chopped onion |
1 clove | garlic, minced |
16 ounce | diced tomatoes in juice |
1teaspoon | fresh basil, chopped |
7 ounce | can tuna in water, drained and flaked |
1/4 cup | bread crumbs, seasoned |
1 | egg, lightly beaten |
3/4 cup | shredded mozzarella cheese |
1. Cut zucchini in half lengthwise. Scoop out center. This can be finely chopped (if seeds are small) and added to tuna mixture.
2. Mix tuna, salt, bread crumbs, egg, 1/4 cup of mozzaarrella cheese and zucchini pulp in a large bowl.
3. Add scoop of tuna mixture to zucchini. Sprinkle remaining mozzarella over top zucchini. Bake in oven until zucchini is tender and mozarella is brown (about 30 minutes).
4. Saute onioin, garlic, tomatoes in juice, and basil. Simmer until vegetables are tender. Serve over zucchini
